Nisha’s Sweetcorn Fritters

A delicious weekend brunch full of colour and bursting with flavour. This MexAre you ready to turn up this heat this weekend? We’re back in the kitchen with the wonderful @nishascookingagain to whip up a Mexican inspired brunch dish you can easily make at home. Packed with your five-a-day, bursting with flavour and vibrancy – these super quick sweetcorn fritters with avocado salsa are a game changer! Plus, you can serve the fritters solo (dial down the paprika) to weaning ones as a finger food win, why not swap the guacamole for a cool creamy yogurt dip?

You Will Need…
Fritters
200g tinned sweetcorn
1 grated courgette (optional)
3 eggs
3 teaspoons plain flour
1 teaspoon bicarbonate of soda
1/2 teaspoon paprika
Salt and pepper to taste 

Mexican Avocado Salsa
1 Avocado
10 halved baby tomatoes
Half red onion
6-8 jalapeños finely chopped
2 tablespoons chopped coriander
Half a Lime
Salt and pepper
Olive oil
A few rocket leaves
