Tiny Table Cooks Summer with Nisha Parmar – Kastu Curry

Mum, Masterchef 2018 semi-finalist, cafe owner and private chef to a string of celebrity clients – meet Nisha Parmar. This Summer, we’re hugely excited to have Nisha join us on Tiny Table as our resident family-food chef. Each week throughout July and August she’ll be sharing her most loved family meals straight from her kitchen to yours. Believing food is the best way to bring families together, Nisha recipes, step-by-step videos and fail-safe top tips will make whipping up bites for your brood a breeze. 

Nisha’s Katsu Curry

You Will Need…
3 Chicken breasts or 1 Aubergine or 2 sweet potatoes

Sauté
1 medium Onion diced
2 carrots diced
2 cloves garlic
Small handful coriander stalks

Add flavouring
1 heaped teaspoon Medium Curry powder
1 level teaspoon garam masala
1 tablespoon Mango Chutney (I like Geeta’s)
1 tablespoon soy sauce
1 heaped teaspoon plain flour
Water

For breadcrumbing
Panko Breadcrumbs – or any alternative
2 eggs or Chickpea Water for Vegan
More plain flour

Soak and cook for 10 mins
Basmati rice – 1 cup to 2 cups water

Garnish
Salad leaves – any salad of your choice
Red chillis and lime (optional)
